Shrimp / Lachs Panaeng Curry
A rich, creamy Thai curry that's mild, velvety, and incredibly beginner-friendly.

Ingredients

250g shrimp or salmon

1 red pepper or zucchini

1 tbsp oil

Fish sauce or salt

2-3 tbsp panaeng curry paste

1 can coconut milk
- Basil (optional)
Instructions

Cook coconut milk together with panaeng paste until fragrant and the oil separated

Add vegetables and simmer for 5 minutes.
- Add more coconut milk if needed

Add shrimp or salmon and cook until just done.

Season with fish sauce.

Add basil before serving.
