Chicken Massaman
A warm, winter-perfect curry with tender chicken, potatoes, and gently spiced Massaman sauce.

Ingredients

300g chicken thighs

2–3 potatoes

1 onion

1 tbsp oil

Salt or fish sauce

Optional: peanuts

2-3 tbsp massaman curry paste

1 can coconut milk
- 1 tsp coconut sugar
Instructions

Cook coconut milk together with massaman paste until aromatic.

Add chicken and brown lightly.

Add coconut milk + potatoes + onion.

Simmer 20-25 minutes until potatoes are soft.

Stir in coconut sugar and season.

Add peanuts if desired.

Massaman Paste + coconut milk→ 3 min / 120°C / Speed 1.

Add chicken → 5 min / 100°C / Reverse / Speed 1.

Add coconut milk + potatoes + onion → 20 min / 100°C / Reverse / Speed 1.

Season at the end. with coconut sugar and fish sauce to your taste
Tips

Replace chicken with beef, tofu, mushrooms, or chickpeas.
